Instructions

Activate Yeast
Warm the milk (lukewarm, not hot), stir in sugar, then sprinkle on yeast. Let stand 5 minutes until frothy. -
Mix Dry Ingredients
In a large bowl, whisk together flours and salt. Gently fold in the Bake Blend Tooty Fruity mix. -
Form Dough
Pour in the yeast-milk mixture and melted butter (plus egg, if using). Stir until a soft, slightly sticky dough forms. -
First Rise
Knead briefly on a floured surface, shape into a ball, and place in an oiled bowl. Cover and let rise for 1 hour, or until doubled. -
Shape & Second Rise
Punch down, shape into a loaf (or round). Place in a greased loaf tin. Let rise an additional 30 minutes. -
Bake
Preheat oven to 190 °C / 375 °F. Brush the top with melted butter or milk. Bake for 35–40 minutes, or until golden and hollow-sounding when tapped. If browning too much, tent with foil after 25 minutes. -
Cool & Serve
Let the bread cool completely in the pan before slicing.
