Ingredients

  • 500 g strong white bread flour

  • 5 – 10 g Bakers Street General Purpose Bread Improver (0.5%–1% of flour weight)

  • 7 g salt (≈ 1¼ tsp)

  • 10 g sugar (≈ 2 tsp)

  • 7 g instant yeast (≈ ½ tbsp)

  • 300 ml lukewarm water (≈ 110 °F/43 °C)

  • 20 g unsalted butter, softened (or 1 tbsp oil)

Why Use Bread Improver?

  • Strengthens dough structure, boosts elasticity, and supports robust volume

  • Extends shelf life and slows staling, keeping loaves soft longer

  • Helps produce consistent, bakery‑quality crumb and rise even in shorter fermentation cycles

Method

  1. Mix dry ingredients: Combine flour, improver, salt, sugar, and yeast in a large bowl.

  2. Add liquids: Pour in warm water and butter. Mix until dough comes together.

  3. Knead: On a lightly floured surface, knead for ~10 min until smooth and elastic.

  4. First rise: Place the dough in a greased bowl, cover, and let rise until doubled (≈ 1 hour).

  5. Shape dough: Gently deflate, shape into a loaf, and place into a greased 9×5 in loaf tin.

  6. Second rise: Cover and let
rise until dough reaches top of tin (≈ 30–45 min).

  7. Bake: Preheat oven to 220 °C (430 °F). Bake for 25–30 min, or until the loaf sounds hollow when tapped. Optionally, bake directly on the rack for 5 min more for a crisper crust.

  8. Cool: Remove from tin and rest on a wire rack before slicing.
