Recipe: Light & Fluffy Spelt Bread

Ingredients

  • 500 g Organic White Spelt Flour

  • 10 g sea salt

  • 7 g active dry yeast

  • 350 ml warm water

  • 1 tbsp honey or maple syrup (optional)

  • 1 tbsp olive oil or melted butter (optional)

Method

  1. Activate the Yeast

    • Mix the warm water and honey.

    • Sprinkle yeast on top and allow it to sit for 5 minutes until frothy.

  2. Prepare the Dry Ingredients

    • Whisk the spelt flour and sea salt together in a large bowl.

  3. Combine Ingredients

    • Pour the yeast mixture and oil into the flour.

    • Mix until a rough dough forms.

  4. Knead the Dough

    • Turn it onto a floured surface and knead for 8 – 10 minutes.

    • Avoid over-kneading because spelt dough is more delicate.

  5. First Rise

    • Place the dough in a lightly oiled bowl.

    • Cover and let it rise for about 1 hour or until doubled.

  6. Shape the Dough

    • Gently deflate the dough and shape it into a loaf.

    • Place it in a tin or on a baking sheet.

  7. Second Rise

    • Let the dough rise for another 30 – 40 minutes until puffy.

  8. Bake

    • Preheat the oven to 220°C (200°C fan).

    • Bake for 10 minutes, then reduce to 200°C (180°C fan) and bake for 20 – 25 more minutes.

    • The loaf is done when golden brown and sounding hollow underneath.

  9. Cool Completely

    • Let the bread cool on a rack for at least 30 minutes before slicing.

Baking Tips for Best Results

Useful Tips

  • Spelt absorbs water quickly, so the dough may feel soft this is normal.

  • Avoid adding too much extra flour; it can make the loaf dense.

  • For a crisp crust, place a tray of hot water at the bottom of the oven.

  • Add-ins like seeds, nuts or dried fruit can upgrade the loaf easily.

  • Slice and freeze to keep the bread fresh for longer.

Why This Recipe Works

  • Organic White Spelt Flour gives a naturally soft and airy crumb.

  • Its fine milling helps the loaf rise beautifully without becoming heavy.

  • The flavour is light and pleasant, making this bread versatile for sandwiches, toast or as a dinner table loaf.

  • The recipe is simple but optimised specifically for spelt’s unique baking behaviour.
