Shipton Mill GLUTEN-FREE Oat Flour is a lovely short flour, this will add a great texture to cookies and bread mixes, and can stand in for ground almonds in some of the more expensive ingredients lists.

Team it with another short flour – e.g. White Rice Flour – and a small amount of binder such as Guar Gum or Xanthan Gum to make an excellent base for tray bakes.
